Cilantro Lime Vinaigrette
Fresh, crisp clean taste on the palate… Makes 2 cups
1 bunch of cleaned, washed, cilantro
3 cloves, garlic
1/2 shallot
2 lime zest
1/4 cup freshly squeezed lime juice
2 tbsp honey
1/2 cup white wine vinegar or white balsamic vinegar
1 1/2 cup light extra virgin olive oil or avocado oil
1/2 tsp salt
1/2 tsp freshly ground black pepper
In a blender, add lime juice, cilantro, garlic, shallot, zest, honey, salt, pepper, and vinegar and blend until smooth, for about 2 minutes.
Once those ingredients are blended, slowly add the oil to vinegar mixture until it emulsifies.
Adjust salt and pepper to taste. Use less salt as the lime juice, vinegar and zest add acidity to your vinaigrette.
Store in refrigerator for up to 2 weeks.
